More about Yves & Sally Nivesse & their children
The Clos des Pins is a personally owned and managed family restaurant where the experienced and talented Yves is the Head Chef and his British-born wife, Sally, directs the ‘Front of House’. Exquisite French cuisine from Yves and friendly, professional service from Sally! Many of the regular clients believe that this is the best of both worlds!
Yves was brought up as part of a busy and successful family restaurant business close to the nearby famous village of St. Paul de Vence. Here Yves’ Mum, 'la patronne', taught him the basics of food preparation and French cooking. Yves moved on to train at two prestigious Relais & Chateaux Hotels, the Mas d'Artigny in St Paul de Vence and Mallory Court in Stratford-upon-Avon, England.
Producing fresh, exciting and innovative dishes became a passion and Yves and Sally, opened their first restaurant, the Sant'Anna in Cape Town, South Africa, specialising in Mediterranean cuisine with an emphasis on fresh fish. The restaurant received glowing reports in many leading South African magazines and was prominently featured in the Air France in-flight magazine.
On his return to Europe, Yves took up a position as Head Chef at a highly rated restaurant in Sussex, England.
Later, prior to opening the Auberge du Clos des Pins, Yves held prestigious positions as a Head Chef in private villas and on luxury yachts. He personally catered for internationally famous personalities including a well-known Hollywood film director, a leading personality in international football and two world-famous international Royal families.
Yves works in the kitchen with their son, Stéphane as Sous-Chef and Sally works front of house with Alexandre their eldest son.
The cuisine at the Clos des Pins
The cuisine at the restaurant reflects Yves’ vast local and international experience as a top chef. It is probably best described as ‘Modern International’ but with some traditional French and Mediterranean dishes and fresh local fish a real speciality. You can be certain too of fresh vegetables, sourced locally where possible, as well as healthy-eating choices and vegetarian options every day!
But Yves is a versatile, innovative and well-travelled chef who is passionate about food. So from time to time you may expect Yves’ repertoire to reflect other influences from time spent preparing meals from Italian, Turkish, Caribbean, Japanese, Indian and Thai cuisines.
